Homemade Chicken Tenders

Ingredients

  • 1 pound chicken fillet
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Garlic powder 1/2 teaspoon
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 teaspoons hot sauce
  • frying oil

Instructions

  1. Combine flour, baking powder, salt, pepper, and garlic powder in a medium bowl, mix well and set aside. Place buttermilk, eggs, and hot sauce in another medium bowl and whisk until completely combined. Add about 3 inches of oil to a skillet with a thick bottom and deep sides. I also like to use a dutch oven for this, I raise the oil temperature to medium heat. The oil temperature should be about 325°F.
  2. While the oil is heating, dredge the chicken breasts individually into the flour mixture. Brush the tenders well to shake off excess flour. Dip tenders in buttermilk mixture and drain excess water. Return the fillet to the flour mixture to coat well and dab the flour onto the fillet to form a good crust.
  3. Once the oil is ready, carefully place the tenders into the hot oil. Do not overfill the pot. I need to do this in batches. He bakes for 3 to 5 minutes on each side until the internal temperature reaches 165°F and is golden brown and crisp. Place the remaining tenders on the grate while frying.
