Oven Baked Chicken Parmesan

This delicious parmesan-baked chicken recipe is easy and doesn't require frying. This chicken parmesan cheese is freshly baked, so it's healthy, quick, and easy! Make this crispy chicken parmesan-crusted chicken for dinner tonight in about 30 minutes!

This is a great chicken breast recipe. Cut the chicken breast in half lengthwise and pat it down to an even thickness to help it cook faster and bring out more restaurant-quality flavor.

Ingredients

  • 2 tablespoons olive oil
  • 2 medium chicken breasts
  • 1 egg
  • bread crumbs 1 cup
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Garlic powder ½ teaspoon
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup marinara sauce
  • 1 ½ cups grated mozzarella cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Line a baking sheet with foil and brush the foil with olive oil. Adjust the oven rack so it is second from the top. Preheat oven to 400°F.
  2. Halve the chicken breast and pound it to an even thickness.
  3. Slice the chicken breast in half like a butterfly (slice it open like a book), but slice it completely into two halves.
  4. Cut the chicken breasts in half, place them evenly in a 1-gallon ziplock bag, seal, and mash to even thickness with a meat masher or rolling pin. If you prefer, you can sandwich the chicken breast between cling film instead of putting it in a ziplock bag.
  5. Pat the chicken breast lightly with a paper towel and season with salt and pepper.
  6. In a shallow bowl, combine bread crumbs, grated Parmesan cheese, salt, pepper, garlic powder, oregano, and black pepper.
  7. Beat the eggs on another flat plate.
  8. Dip the chicken breast into the egg and then into the breadcrumb mixture. Make sure the chicken breast is completely coated with the crumb mixture and use your hand to gently press the crumbs onto the chicken. Place the chicken breast on the prepared baking sheet and repeat with the remaining chicken...
  9. Place the baking sheet on the second shelf from the top of the oven. Bake for 15 minutes or until fully cooked.
  10. Flip chicken over and drizzle 1/4 cup marinara sauce over each chicken and sprinkle with cheese. Return to oven. Turn on the broiler. Grill until cheese is melted and bubbly and chicken is browned around the edges, 2 to 4 minutes.
