Ingredients

  • 1 tablespoon butter
  • 2 tablespoons olive oil

FOR THE MUSHROOMS

  • 8 ounces sliced ​​mushrooms
  • 1 large yellow onion, sliced
  • Season with salt and freshly ground pepper
  • 3 garlic cloves (minced)

FOR THE CHICKEN BREASTS

  • Beat 4 (1 lb total) boneless and skinless chicken breasts to 1/4-inch thickness
  • Season with salt and freshly ground pepper
  • Garlic powder 1/2 teaspoon
  • 1/2 teaspoon smoked or sweet paprika
  • 1 teaspoon Italian seasoning
  • 4 ounces shredded mozzarella cheese
  • 1/2 cup low-salt chicken broth
  • Chopped fresh parsley for garnish

Instructions 

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Lightly grease a 9x13 baking pan with cooking spray and set aside.
  3. In a large skillet over medium-high heat, melt 1/2 tablespoon butter and add 1/2 tablespoon olive oil.
  4. Add the chopped mushrooms and chopped onions to the pan. Season with salt and pepper and simmer for 5 minutes.
  5. Add garlic, stir, and cook for an additional 30 seconds or until fragrant. Pour half of the mushroom mixture into the prepared casserole dish. Save the rest for later.
  6. Reheat the skillet and add the remaining butter and olive oil.
  7. Season chicken breast with salt, pepper, garlic powder, paprika, and Italian seasoning.
  8. Add chicken breasts to hot oil - you may need to do this in batches if your pan isn't large enough.
  9. Remove the chicken breasts from the pan and arrange the mushrooms in a casserole dish. Return the skillet to the stove. Add chicken broth and scrape up any browned bits. Bring mixture to a boil and cook for 4 to 5 minutes or until liquid is reduced.
  10. Place the remaining mushroom mixture over the chicken breast, sprinkle the cheese over the chicken breast, and pour in the prepared chicken broth.
  11. Bake uncovered for 15 minutes or until chicken is cooked through.
  12. Remove from oven. Garnish with fresh parsley.
  13. Serve.
