Dinner doesn't get much better than this delicious home-cooked casserole! It's jam-packed with carrots, peppers, and onions, and uses leftover roast chicken, rice a roni, cream of chicken broth, and simple ingredients!
A casserole is the ultimate comfort food. You remind me so much of my childhood.
INGREDIENTS
- 1 - 6.9 oz Box Chicken Roni Roni or any Box of Rice and Pasta Mix
- 1 cup thinly sliced carrots
- 1/2 cup chopped green pepper
- 1/2 cup finely chopped onion
- 1 - 10.5 oz can of creamy chicken soup
- 1 cup sour cream
- 2 cups chopped cooked chicken breast
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese

INSTRUCTIONS
- Preheat the oven to 350 degrees. Grease a 9x13 casserole dish.
- Add carrots, bell peppers, and onions for the last 5 minutes of his and cook rice in Loni according to package directions. Stir in a cream soup, sour cream, chicken breast, and black pepper. Remove from stove.
