INGREDIENTS 

  • 1 pound of ground fodder, well-cooked and drained
  • 1 (14.5 oz) can of diced cherry tomatoes
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • Garlic powder 1 teaspoon
  • Onion powder 1 teaspoon
  • ½ teaspoon dried oregano
  • 1 cup water
  • 8 hot dogs
  • 8 low-carb tortillas or wraps
  • 1 cup grated cheddar cheese

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Spray a 9-inch x 13-inch casserole dish with nonstick cooking spray.
  2. In a medium saucepan, combine cooked beef with tomatoes, water, and dried seasonings. Bring to a boil over high to medium heat, then reduce to low to medium heat. Simmer for 8-10 minutes, stirring occasionally.
  3. Pour about 1/2 cup of sauce into the bottom of the casserole dish. Roll each hot dog in a low-carb tortilla. Place seam side down on the sauce.
  4. Pour the remaining sauce over the hot dogs. Cover the casserole with cheese.
  5. Bake for 30 to 35 minutes or until the center is set. Serve with hot dog toppings such as pickles, mustard, onions, and sauerkraut.
