One Pot Mexican Ground Beef and Rice

One Pot Mexican Ground Beef and Rice is a stovetop dinner recipe stuffed with ground beef, rice, salsa, corn, and cheese. This cheesy ground beef and rice casserole is an easy dinner recipe perfect for a weeknight.

This cheesy ground beef and rice are slightly spiced with taco seasoning and medium salsa.

Ingredients

  • 1 pound lean ground beef
  • 1 cup diced yellow onion
  • 10.5 ounces of condensed chicken broth
  • 2 cups water
  • 2 cups instant rice
  • 1 cup medium salsa
  • 1/2 cup Heinz chili sauce
  • 8.75 oz canned corn, no drain
  • 4 ounces chopped canned green chilies, not drained
  • 1-ounce taco seasoning
  • 3 cups shredded mozzarella and cheddar cheese
  • 1 teaspoon dried chives

Instructions

  1. Place a large skillet on the stove over medium-high heat and add the butter or margarine to the pan.
  2. Fry the minced meat in a frying pan.
  3. While the minced meat is cooking, add the chopped onions to the skillet.
  4. Continue cooking the ground beef and onions, taking care to break the ground beef well.
  5. When the ground beef is cooked, remove the fat from the frying pan. While the pan is still on medium heat, add the condensed chicken stock and water to the pan.
  6. Add instant rice to the pot.
  7. Stir gently until all the rice is submerged in the liquid.
  8. Simmer the dish, stirring occasionally, until all the liquid is absorbed by the rice.
  9. Add salsa, chili sauce, canned corn, chopped green chilies, and taco seasoning to the skillet. Don't drain the canned corn and green chilies before adding them to the pan.
  10. Mix well.
  11. Let the dish simmer for a few minutes, then remove the pan from the heat.
  12. Add 2 cups shredded cheese to the skillet.
  13. Stir until the cheese is completely incorporated into the ground beef and rice mixture. Sprinkle the remaining shredded cheese on top, but do not stir at this time.
  14. Sprinkle the dried chives over the cheese.
  15. Let the bowl sit for a few minutes to melt the cheese.
  16. Serve and enjoy!
