Pepperoni pizza egg rolls are the perfect party appetizer or after-school snack.

Ingredients
- 1 cup grated mozzarella cheese
- 8 ounces hot pepper, chopped [thick cuts are great for replicating these delicious diced hot peppers]
- 1/4 cup marinara sauce (recipe)
- 1/4 teaspoon crushed red pepper
- 1 teaspoon Italian seasoning
- 1/4 cup water
- 24 spring roll wrappers
- vegetable oil, for frying

Instructions
- In a medium bowl, combine mozzarella, pepperoni, marinara sauce, crushed red pepper, and Italian seasoning.
- Place about 2 tablespoons of the filling in the center of each spring roll casing, brush the edges of the spring rolls with water, fold the sides in and roll them up.
- Add 3 inches of vegetable oil to a Dutch oven, heat the thermometer to 375 degrees, and fry the spring rolls for 1 to 2 minutes or until golden brown.
