One Pot Chicken Parmesan Pasta

Instructions

  1. To a large pot or skillet (I used my dutch oven), add a drizzle of olive oil and heat over MED-HIGH heat. Add chicken, and season with salt, pepper, Italian seasoning, and garlic powder. Cook for about 5 minutes, until chicken is most of the way cooked through. Remove to a plate. Add the onion and garlic to the pan and simmer for 2-3 minutes until softened. Pour in the marinara sauce, fill an empty sauce jar with water, and add to the pan. Bring to a boil and then reduce heat to high.
  2. Add chicken and noodles, mix, cover, and simmer for 10-15 minutes, until noodles are cooked to your liking. Stir in Parmesan cheese and 1/4 cup mozzarella cheese. Sprinkle the remaining 3/4 cup mozzarella cheese over the dish and cook for an additional 2-3 minutes, until the cheese is melted and sticky.
  3. Sprinkle with Italian seasoning, if desired, and garnish with parsley or basil.
