INSTRUCTIONS

  1. To a large skillet, add the olive oil, and pounded chicken, evenly season with 21 Salute, salt, and pepper, and cook over medium-high heat for 5 minutes. Do not touch, move, or disturb the chicken while it is searing. After 5 minutes, flip the chicken over. It should be a medium golden color. For thicker/larger chicken breasts, bake for 6-7 minutes.
  2. Grill the back side of the chicken for about 5 minutes or until completely cooked. Again, do not disturb while the chicken is sizzling.
  3. Remove the chicken with a spatula and place it on a plate to rest. With caution, add the wine (or broth) to deglaze the pan and wait for the liquid to bubble, and steam vigorously for a few seconds.
  4. Add butter and melt for about 1 minute. Stir constantly until dissolved.
  5. Add garlic and cook until fragrant, about 1 minute. Stir constantly.
  6. Turn off the heat, return the chicken to the pan, add the garlic butter sauce, and spoon the sauce over the chicken.
  7. Garnish with parsley if desired and serve immediately.
