Instructions

  1. Set the oven rack to the top center position. Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with nonstick spray.
  2. Dry chicken wings with kitchen paper and place in a large bowl. It is important to dry thoroughly!
  3. In a small bowl, mix the salt, pepper, garlic powder, paprika, and baking soda. Then sprinkle the chicken wings with the spices and spread them evenly. Place wings, skin side up, in a single layer on a prepared grid.
  4. Bake on the top rack in the middle of the oven, rotating every 20 minutes until the wings are crisp. The total cooking time depends on the size of the chicken wings but can take up to an hour.
  5. Remove from oven and let stand for 5 minutes. Place the chicken wings in a bowl and mix with the sauce. For buffalo sauce:
  6. Combine all sauce ingredients in a medium saucepan over medium heat. Mix well until the sugar dissolves.
  7. Remove from heat and let cool to room temperature before adding to chicken wings (or make the sauce ahead of time and refrigerate).
