Coronation Chicken Salad

Coronation chicken salad is a traditional English salad prepared for the coronation of Queen Elizabeth II. Chicken is tossed in a light curry dressing with chutney, grapes, and almonds. Delicious as a sandwich filling or on a bed of lettuce.

INGREDIENTS

  • 1 tablespoon of neutral flavored oil, mild olive or coconut oil.
  • 3 tablespoons diced shallots; (1 medium).
  • 2 1/2 teaspoons curry powder, use more or less depending on taste.
  • Dice 2 tablespoons of Major Gray Chutney into large chunks. 3 tablespoons apricot jam
  • 1/2 cup mayonnaise
  • 1/2 teaspoon dry mustard powder
  • 1 teaspoon lemon juice
  • 1 1/2 tsp kosher salt
  • 1 teaspoon black pepper
  • 12 oz chicken breast, cooked, diced, or shredded. (about 2 1/2 cups)
  • 1/2 cup red or green grapes, halved
  • 1/2 cup coarsely chopped raw almonds

INSTRUCTIONS

  1. Heat the oil in a frying pan over medium-high heat until the oil shimmers. Add the diced shallots and stir-fry briefly for 1-2 minutes. Add curry powder and fry for another minute. Remove from stove. Dice large chunks of chutney. Add the chutney, apricot jam, lemon juice, salt, and pepper to the shallots and curry.
  2. In a food processor or blender, blend or puree the chutney and curry mixture with mayonnaise into a smooth paste. Check spices and add salt, black pepper, lemon juice, or curry powder if desired.
  3. Add chicken, curry mayonnaise, grapes, and almonds to a bowl and mix. Adding chicken, grapes, or almonds will dilute the flavor, so adjust accordingly.
  4. Serve as a filling on sandwiches or a bed of lettuce for a low-carb or gluten-free option.
