Buttered Lobster When the holidays come around, it's so much fun to spice up a recipe to make it really special... All you need is lobster, ghee, salt, and pepper!

Ingredients

  • 1/4 cup Carlini ghee clear butter, extra for dipping
  • 2 or more specially selected cold-water spiny lobsters defrosted
  • Stone-ground salt and stone-ground black pepper

Instructions

  1. Using sharp kitchen shears, cut the entire underside of the lobster tail.
  2. Use your hands to de-shell the lobster and remove it completely.
  3. Place on a plate and pat dry.
  4. Repeat for as many lobster tails as you would like to cook.
  5. Sprinkle lightly with salt and pepper. Place the ghee in a 12-inch cast-iron skillet and heat over medium-high heat.
  6. When the ghee is hot, carefully place the lobster into the pan and cook for 1-3 minutes per side or until the meat is no longer translucent.
  7. After cooking, take it out and put it on a plate.
  8. If using multiple batches, add more ghee to the pan as needed.
  9. Serve immediately with extra melted ghee for dipping.
