Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup plain yogurt
  • 1 cup sugar
  • 3 large eggs

  • 1/2 cup vegetable oil
  • 1 cup diced strawberries about 1/4 cup

Glaze:

  • 1/2 cup mashed strawberries about 1 cup
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Spray an 8-inch or 9-inch loaf pan with nonstick cooking spray and set aside.
  2. Mix flour, baking powder, and salt in a medium bowl.
  3. In another large mixing bowl, combine Greek yogurt, sugar, eggs, extracts, and oils. Stir slowly until the dry ingredients are completely mixed.
  4. Fold in the strawberries and pour the batter into the prepared mold.
  5. Bake for about 50 minutes or until the center is set.
  6. Remove from the oven and let rest for 10 minutes, then turn over on a cooling rack to cool completely.
  7. Make the glaze while the bread is cooling. In a medium bowl, combine mashed strawberries and powdered sugar.
  8. Once the cake has cooled, pour the icing on top and when set, slice and serve.
