As much as we love real crust pizza, making a low-carb pizza casserole is so much easier—one of the reasons it's a weekday staple in our house. With a crustless pizza casserole, there's no need to knead or stretch the dough.
Ingredients
- 1 large-headed cauliflower (cut into small florets about 3/4 to 1 inch tall)
- 2 tablespoons olive oil
- 2 tsp Italian seasoning (optional)
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 1/2 cups marinara sauce
- 2 cups mozzarella cheese (shredded)
- 2-ounce pepperoni slices

Instructions
- Preheat the oven to 218°C.
- Toss cauliflower with olive oil, Italian seasonings, sea salt, and black pepper in a 9-inch x 13-inch (23 x 33 cm) white stoneware casserole dish. Distribute them evenly on one layer.
- Roast the cauliflower in the oven, flipping halfway through and baking until tender and slightly golden, about 25 minutes. (Leave the oven alone. You'll need to use it again.)
- Pour the marinara sauce evenly over the cauliflower. Sprinkle with grated cheese. Place pepperoni slices on top. Return the casserole to the oven for 10-15 minutes until the cheese is melted and golden brown.
