As much as we love real crust pizza, making a low-carb pizza casserole is so much easier—one of the reasons it's a weekday staple in our house. With a crustless pizza casserole, there's no need to knead or stretch the dough.

Ingredients

  • 1 large-headed cauliflower (cut into small florets about 3/4 to 1 inch tall)
  • 2 tablespoons olive oil
  • 2 tsp Italian seasoning (optional)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups marinara sauce
  • 2 cups mozzarella cheese (shredded)
  • 2-ounce pepperoni slices

Instructions

  1. Preheat the oven to 218°C.
  2. Toss cauliflower with olive oil, Italian seasonings, sea salt, and black pepper in a 9-inch x 13-inch (23 x 33 cm) white stoneware casserole dish. Distribute them evenly on one layer.
  3. Roast the cauliflower in the oven, flipping halfway through and baking until tender and slightly golden, about 25 minutes. (Leave the oven alone. You'll need to use it again.)
  4. Pour the marinara sauce evenly over the cauliflower. Sprinkle with grated cheese. Place pepperoni slices on top. Return the casserole to the oven for 10-15 minutes until the cheese is melted and golden brown.
